A Tale of Two Christmas Cakes.

Well, not so much as a tale tale but a Merry Christmas everyone!

Just a few days late…

Merriest of Christmases to each and every one of you and yours. May the many blessings of our Lord shower upon you. Peace, love, and joy. Keep the Christmas spirit alive all year long.Β 

It has been rather hot down here in Texas and Christmas day was north of 80 degrees F I believe. My horses were sweating on Sunday just grazing. I think we are supposed to get a cold snap here this weekend, but it does not generally feel very winterey to me. I for one and perfectly OK with that after last year. I know there are many that feel the same and we are all praying that we do not have the same experience this coming year.

Even still, I attempted to create a little winter with my Christmas desserts. If you can’t beat ’em, join ’em. Or something like that?

I present to you a gilded Christmas, winter forest in the form of a chocolate cheesecake cake complete with decorated trees. Two rich, dark chocolate cake layers with a creamy and sinful cheesecake layer in the middle, all wrapped in cream cheese frosting.

This cake was actually for a party the weekend before Christmas. I figured, so long as the inside is good, it does not much matter what the outside looks like. Just do it! I think it turned out pretty well! It is abstract, OK?! If you don’t bid, you don’t win. I think I won.

Christmas morning brought a cookie for the Merley before completing my next cake.

The ultimate Christmas morning scene in the form of a cheesecake (my friend blamed me for the cream cheese shortage…). A spiced cheesecake with a gingersnap crust, glazed in white chocolate ganache, and decorated with homemade gingerbread cookies.

It was all worth it in the end, even if I was cursing myself by the time Christmas morning actually did roll around. I baked the cheesecake and prepared the gingerbread dough on Thursday evening. Merle and I danced and listened to music in the kitchen while I went about the mixing and baking.

Then on Friday, it was gingerbread cookie central. They are worth it, take my word for it, but man! Rolling and cutting cookies…and then decorating said cookies is so much work! It took all morning and then I had to wrap the presents! Luckily for me, it was not too many and I was able to get them all quite quickly. I do not often make cut out cookies for the simple reason that it takes so long. I forgot apparently when I saw the cover of Southern Living and came up with this plan. I remembered about the time I had two trays left to bake and realized how much decorating I needed to do. Anyhow, for a first time attempt at gingerbread cookies and royal icing, I think they turned out pretty great! I am glad I did it. It was fun and it all tasted delicious.

What is a dreamy Christmas morning without horses under the tree?

I really wanted to put an ice skater on top of that white chocolate ganache.

Why, Hello There

Um, hi. Ya. It’s me.

What happened to December? It is already half way through. When in the world did that happen? Jolly old Saint Nick is coming faster to town than ever before!

I have not yet finished my Christmas shopping. I used to get all of my gifts before December even hit. How did I ever manage that?

Anyway.

Clearly I have been really busy. Busy doing what, I am not overly sure about, but sure, yes, busy. Busy enough to barely be writing to y’all! Busy with work, family, laundry (duh!), and watching Christmas movies. Lots of them. You know the ones I am speaking of. They are your favorites too, even if you dare not admit it. Hallmark Christmas movies! I am not the only one who loves them!

Trying to ride as much as possible which has proved overly difficult. It rained so much last weekend that the varmint holes were full of water two days later! So far I have spent more time scooping poop and pulling burrs out of manes and tails than riding. Although I did get some good riding time around Thanksgiving, so there is that!

I did bake pumpkin bread last night. And ate some last night…and again this morning. I have to tell you, there is nothing like a house that smells like fresh baked pumpkin bread (or my Mamma’s rolls)! I walked downstairs this morning and it still smelled that way! Put a big ol’ smile on my face it sure did! As did eating it, but I am sure you guessed that.

Have you heard all the great Christmas music being shared over on the Facebook page?! I am going to give you some valuable life advice. If you have not clicked over there and had a listen, you are truly missing out. I bet you there are a few on there already that you have not heard before and there are even more to come, along with some great classics. Honestly, there are not enough days before Christmas to share all of my favorites. It has been hard to pick and choose which ones to share. One song a day is hard!

This version was new to me this year!

Christmas music really gets me into the spirit. Now all I need to do is find the rest of my gifts, get to wrapping, and figure out what I will bake for our family gatherings. What do y’all think? What should I make? What is your favorite holiday dessert?

Here is hoping I can finish out the year with more ride time and ring in the new the right way! I am just over here, trying to live in the present.

I meant to write to you yesterday. Sigh. This week after Thanksgiving has started out as a busy one. Seemingly as busy as Thanksgiving itself.

But enough about that.

I know what you really want.

By the way, making chocolate ganache and salted caramel is super easy. You should give it a try. Especially the salted caramel. More than worth it. Yikes, so good!

Oh, sorry. I can not give you any of that. Darn. You are just going to have to go and make it for yourself.

Do not fret about that though. I have something else for you.

How about ride time videos? Between the ears photos? Two great sunsets? A special lunar surprise? You ask, and I shall deliver. I am here for y’all, dear readers.

After we did the big Thursday Thanksgiving meal and all day hangout thing (lots of drinking, lots of eating, lots of talking late into the night), we headed out the farm early Friday morning for more of the same.

First I rode Chance to go check the cows and make sure he was all ready for the kids. He was lazy, just like I like him.

 

There is nothing like the wind in the pecan trees.

 

No such thing as too much of a good thing, as they say, so naturally I hopped on Cheetah after Chance.

She was a bit on the feisty side on Friday. It was a bit of a screaming mare day!

I can not ever get enough of my sunsets which is why I share so many of them with you. Truly a unique painting directly from God’s hand every time. The clouds got in the way of all the sunrises though.

I have not shown you one of these in a while. The moon rising. It was pretty dang epic until the clouds decided to come back for another party. I am just glad they cleared up for the beginning of this.

Saturday morning was for the kids. Niece L helped me groom and tack up before we walked all over the horse pasture. Then Nephew H had his turn going to check the cows and riding all on his own in the round pen before untacking, grooming, treat stuffing, and turning Chance back out with the others.

Cheetah was an angel on Saturday evening. I swear she may have given me a look that said, “thank goodness you are more relaxed today. I really just wanted to stroll around.”

I got home later than my usual last night with full intentions of cooking dinner for myself and even doing laundry. You know, being a good adult and all that. Between the hour and the darkness of winter evenings, I walked in the door and threw that plan out the window as I was finishing up a phone call. Now that is what I call being a good adult! Ha, I jest.

But, hey, I did unpack my car (mostly) and put some things away. At least there is that!

For nights like those, having a freezer stash, a cheesy Christmas movie, and some quiet down time is where it is at.

So, I did just that while putting a few Christmas decorations out.

I am grateful to have had the quality time with the family that I did, enjoy some great meals, be at the farm, and have some much needed saddle time.

It left me wanting more. More of all of the above. More time with my people. All of them. More time at the farm. More time behind those dun colored ears. Less minutia.

I hope everyone had a grand Thanksgiving if you celebrate it.

Slow Down

Do not forget to allow time slow down this time of year! Take a deep breath and enjoy it, whatever Thanksgiving brings your way this year.

I somehow forgot until Sunday afternoon that Thanksgiving is indeed this Thursday. As in a few days from now. Completely slipped my mind. Go figure that and get back to me. It is not like I have been talking about Thanksgiving and the season and being mindful or anything.

Anyway. I remembered while I was in the grocery store to pick up a couple things to make some chili. I do believe I made it out with everything I need. Here is the kicker. Without a list! Another fact you could spend more than an iota pondering, but I will not spend my time doing that.

This year I am making the best cheesecake, but with a twist this time. A topping of chocolate ganache and salted caramel with pecans. I am also making my fancy cranberry sauce as per usual (if you have never made or had cranberry sauce from scratch, you are missing out) and the best sweet potatoes. Then, for Thanksgiving round two, I will be making some kind of gluten free dessert for my Pop’s birthday. Stay tuned for more recipes and final results!

If you are reading this and are surprised much like I was that Thanksgiving is this week, fear not, you are not alone! Do not feel bad! You have buckets of that thing called time. Trust me.

Wee Little Secret

Psst. Hey you.

Yes, you. Over there.

I have a little secret for you.

It is one of those secrets of life.

Are you ready?

The best recipes tend to be found hand written on the inside flap of a well loved and worn cookbook, at the top of the stack in the cabinet.

I know, right? Not within the actual glossy printed pages of the book itself. I just blew your mind, I know.

They can sometimes also be found photo copied with notes on them, tucked inside the aforementioned inside flap, but that is another story for another day.

This, my friends, is where you can find this lovely cheesecake recipe. The book is of faded blue and the binding broken and frayed. The recipe hand written in smudged pencil by my Mamma.

I would bet my mom was on the phone while she traced the title ‘Cheesecake’ and the doodle beneath.

This is the best cheesecake ever, on its own, but I wanted to make it extra special for Mother’s Day. Enter raspberries and chocolate wafer cookies for the crust. I added some raspberry puree to the top layer along with a little unflavored gelatin to compensate for the extra liquid and bam. You get this layered masterpiece.

A little abstract, yes. But that is OK. Homemade desserts are not supposed to be perfect! Farm fresh eggs also made it a little less than white with those dark and bright yolks.

I am not the biggest fan of the gelatin, but I will figure it out eventually.

Now I want more cheesecake.

I do not like to talk about politics and I am certainly not going to do that here. That is not what this is for. Do not you worry.

I will say this. I am proud.

Proud to be a Texan.

Proud to be an American.



I can not speak for people from other states or countries, but Texans seem to be born proud. It is in our blood and we take it pretty seriously. You do not have to be born here to get it in your blood either, but I have also come across some people in my life that just do not quite seem to understand it.

Sometimes, I can’t quite explain it either. It is somewhat of a mystical thing and has a sort of magnetic pull, something that just wells up inside and grows throughout your life. It is certainly a special place. A place unlike any other. Not the South. Not the West. Uniquely its own. Naturally there are songs written about it. You did not think I would skip that, did you? We will get to that in a minute. 

The 4th of July always makes me reflect on this. I feel blessed and grateful to live in this country. To do the things I love to do. To be my independent self. To be able to see the light every day. Prouder still, to be a Texan. It is part of who I am. So. This weekend I celebrated with my family doing what I love because I can. I am free to do so. That is what being an American and being a Texan means to me.

I went to the country. I had quality time with my family. I rode my horses by myself.

I rode my best mare with my Nephew behind me, holding on, while my sister rode Ike with my Niece wrapped in her arms in front of her. One in front of the other and side by side. I baked. 

We ate. We drank. We splashed in the baby pool in the yard. We played with dogs. I went fishing with BIL B, his brother, and my Nephew. Which, by the way, is my second most favorite thing to do next to riding. I not only fished, but I caught. I even got to fish with my rod that BIL B made for me because he brought it just in case I wanted to go with them.

I napped. I read. I lost count of how many times we watched Tangled and Frozen during the heat of the day.

People, it would seem, are so terribly divided as of late. I wonder where the pride went. Are they not grateful to be able to see the light everyday? To be able to do what they love? Is it not part of who they are? Where is the love? Love of country? Love of people? Love of themselves? Why focus on the hate when you have a choice? 

Focus on the light and love. It is a choice.
